This guanciale is from 100% Heritage Berkshire hogs. It is a jowl which is seasoned with wine, spices, salt and pepper. It is cured and slowly dried for a minimum of 3 months. Slice thinly and serve at room temperature with your favorite spumante. Also goes great in pasta dishes. No cooking necessary
